Preserving Food: Refrigerator Pickle Basics

This recipe is sort of my skeleton recipe for making refrigerator pickles. It’s a basic brine, and you can mix it up by adding herbs and spices for all kinds of fun pickling adventures! If you like your pickles spicy, I recommend slicing one or two hot peppers or chilies into your jars. Remove the seeds to control the heat, if you want.

I just got back from a gorgeous wedding that was full of canning inspiration. Instead of floral centerpieces, the bride spent all summer canning beautiful north Georgia produce, and she set out arrangements of canned fruits and veggies in a rainbow of colors. At the end of the evening, we all took home some tasty preserves. It definitely put me into a canning state of mind.
