In honor of National Tequila Day we are featuring 4Copas Organic Tequila. I've had the pleasure of trying their Anejo and their Blanco and both were top notch. What I like so much about 4Copas, besides being USDA certified organic and tasting good, they have put a lot care into their process.
To start, 4Copas uses organically grown and harvested Agave. The alcohol is fermented with yeast derived from the organically grown plants and there are no other artificail additives added. The mulch that is left over from the fermentation process is added to their compost which serves two purposes:
1. The methane from the composting process is collected and used to help power the distillery process, and
2. The finished compost is used to fertilize the Agave.
